Gluten-Free Double Chocolate Scones #chocolateforjoan

Last week, the food blogging world lost one of it’s brightest stars, Joan Hayes of Chocolate, Chocolate and More.  Today is National Chocolate Day, so in honor of Joan, many of us are posting chocolate recipes.Gluten-Free Double Chocolate Scones

Gluten-Free Double Chocolate Scones
  • 1½ cups gluten-free all-purpose blend
  • ¼ cup cocoa
  • ¼ cup coconut palm sugar
  • 1 tsp xanthan gum
  • 1 tsp gluten-free baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 Tbsp butter
  • ½ cup milk
  • 2 tsp vanilla
  • 1 egg
  • 1 cup chocolate chips (mini chips would work really well)
  1. In a mixing bowl, whisk together the first seven ingredients (dry).
  2. With a pastry blender, cut in the butter.
  3. (You can also put this in a food processor to mix)
  4. Add the milk, vanilla, and egg.
  5. Stir in the chocolate chips.
  6. Divide the dough out onto two balls.
  7. Pat each into mounded circles on a gluten-free floured work surface.
  8. Cut each circle into four wedges.
  9. Place on a rimmed baking sheet.
  10. Bake in a preheated 400 degree oven for 12-14 minutes.

Today we are joining together to help raise awareness for Heart Disease. Kim of Cravings of a Lunatic lost her Mom to heart disease when her mother was 47, and Kim was 15. Each year on the day her Mom passed she shares stories and photos of her Mom. This year she joined forces with Jen of Juanita’s Cocina, whose life was also touched by heart disease when her Stepfather had a heart attack. Jen’s Stepfather is alive and well more than a decade later, and for that, Jen is thankful every day. The ladies got in touch with other bloggers to ask them to share their own stories about how heart disease has touched their lives. We are coming to the end of Chocolate month.  I will be sad to see it go.  However, there are still a few more days left and the last are certainly not the least.  Today, Teri from The Freshman Cook is here.  I have “known” Teri for a long while.  She comes and plays with the Improv Challenge often, rising to the fun of creating something new out of the two assigned ingredients.  Don’t let the title of her blog fool you.  She isn’t the Freshman.  She writes for the new cook.  She has a lot of experience and it shows in her dishes.

Turtle Krispies

Turtle KrispiesCould you tell by the title who is here today?  Anyone who knows her, has probably guessed that the Lunatic has left the Asylum in Canada and is in sunny Florida today (not for reals, but I wish!)  Kim from Cravings of a Lunatic is nothing if not the Turtle Duchess.  She has taken chocolate, pecans and caramel and turned them into the most AMAZING delicacies from cheesecake to popcorn to cookies to ice cream to truffles to of all things,  apples!  She is also one of my blogging besties.  I simply adore her, from her quick wit to her sweet, sweet, sweet heart (which is why she is here on Valentine’s Day….love you more than cheese, Kim{which in my world is a lot}).  She is one of the few bloggers I actually know in person, as we met last year at Disney World at the Food Blog Forum.  We are looking forward to air hugs (in a very normal way, we both do not care much for hugs)  and many laughs again this year. We have a sweet treat in store for us today.  Grandma Loy is visiting and brought us some goodies she serves her grandchild, The Cookie Monster.  Her blog is just full of homey goodness, just like Grandma’s house should be!  I can just picture sitting at her table with Loaded Pizza Grilled Cheese Sandwiches and a bowl of Vegetable Beef Soup.  However, it’s her long list of cookies, cakes, desserts and brownies that would keep me coming back for more!  This is a grandma with a full cookie jar!  Butterfinger Brownies, Fudge Ripple Cake, Frozen Chocolate Coconut Almond Joy, and  Cocodoodles top my chocolate list! I am so pleased to have Cathy from The Dutch Baker’s Daughter visiting today.  She is an amazing baker with talent to match a very creative imagination.  I have dubbed her the Queen of Cinnamon Rolls because she can make them in any flavor you can conceive (the pressure is on, Cathy!).  On top of that, she enters baking contests…and wins!  She won the Mixing Bowl Awesome Appetizer recipe contest with Cheesy Pepperoni Blossoms, she won a Pillsbury Bake-Off monthly challenge with Pumpkin Snowballs and she won the Frigidaire Ultimate Recipe contest with Peanut Butter Cup Oatmeal Cookies.  She was also a finalist in the Pillsbury Bake-Off in 2010.  Impressive to the max !!  When I saw what she brought us today, I almost cried tears of happiness.  I have wanted to make and eat a Tres Leches cake for years.  Now that I am gluten free, I probably won’t ever get to, but at least the recipe for one is here! Marbled Chocolate Bars
