Gluten Free Microwave Chocolate Chip Cookie For One

These are so addictive!  It’s a good thing that the recipe only makes one serving.

Microwave Gluten Free Chocolate Chip Cookie For One
  • 1½ Tbsp coconut sugar
  • 1 Tbsp unsweetened applesauce
  • 2 Tbsp sour cream
  • ¼ cup hazelnut flour
  • ⅛ tsp vanilla
  • pinch salt
  • 1 Tbsp chocolate chips (I used unsweetened chocolate)
  1. Combine all of the ingredients in a microwave safe bowl.
  2. Cook on high for 1 minute.
  3. Let sit for a few minutes to cool down.
  4. If you want the finished product to look better, stir in one bowl and cook in another.

  1. My sweet tooth is telling me to make this and put a scoop of dairy free ice cream on top! It is easily fooled even when I don’t use refined sugar so I just go with it. This might just be Tay’s after school surprise treat. 🙂

  2. You’re funny! But I’m laughing at myself, too. My problem isn’t with sweets, tho. It’s with that second helping of dinner. Since I can’t seem to stop taking a second helping, I just trick myself by only taking half as much the first time around. Wouldn’t it be great if the scientists told us they’ve been wrong all along and to be really healthy we all need to gain another 50 lbs. LOL

    I love your one serving recipe. I think dessert is the perfect finale to any meal.

    1. You are smart to take half as much! I had a friend who would fill her plate and then scoop half of it onto another plate. She allowed herself to only eat what was left. She lost about 20 pounds doing that. I am not sure I’d be able to do it, though. Each of us has to find out what tricks we can play on our brains. Thanks for coming by!
