Peanut Butter Blondies with chocolate chipsThis is another of my grandmother’s recipes.  Some of you might remember that she was the head baker for a school district in the 1970s.  She got up early every school day and baked treats for all of the schools in town.  Boy! Those were the days!  There is nothing this yummy on any of my kids’ lunch menus.  It’s no wonder my daughter prefers to take her lunch!Luckily, I don’t have to write about lunch menus.  I don’t have anything good to say about them.  However, I do have a lot of great things to say about these blondies.   They are soft and chewy and FILLED with peanut butter and chocolate chips.   It’s no wonder that everyone loves them.    Originally, Mamie added chopped peanuts, too, but my kids don’t even like chunky peanut butter, so I nixed them early on.  If you happen to be a chunky lover (that sounds funny), then by all means, add 1/2 cup chopped peanuts to your batter.

Peanut Butter Blondies with Chocolate Chips

Peanut Butter Blondies
  • 1 cup flour
  • ¾ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 3 eggs
  • 1⅓ cups brown sugar, packed
  • ⅓ cup melted butter
  • ½ cup creamy peanut butter
  • 1 tsp vanilla
  • ½ cup peanut butter chips
  • ½ cup chocolate chips (I used mini chips)
  • ½ cup chopped peanuts (optional)
  1. In a bowl, stir together butter and sugar.
  2. Add the eggs and vanilla.
  3. Stir in the peanut butter until well combined.
  4. Combine the dry ingredients and add them.
  5. Fold in the chips and optional peanuts.
  6. Bake in a greased 9X13 pan 350 degrees for 30 minutes.
Mamie served these with a glaze. In her words, "Just add plain peanut butter to any white glaze." I have never added the glaze, but 2-3 Tbsp to a simple powdered sugar glaze of 1 cup powdered sugar, ½ tsp vanilla and 5-6 Tbsp milk or water should do it. Add more liquid if it's too thick.
