As the mother of five children, I have never been able to keep up with their tastes in food. One day my youngest son told me that he hated pizza and that I should have known that. That was the day I threw in the towel and stopped even trying to keep up. As luck would have it, there are a few foods that my kids have always agreed on: macaroni and cheese, chicken enchiladas, and good old Campbell’s Chicken Noodle soup.For 144 years Campbell’s has been producing great tasting soups for American consumers. My kids get even more excited if I bring home a couple of cans of character soups like Phineas and Ferb or Super Mario that have cute little pastas. The rule of not playing with their food is always suspended when I serve those. It’s always so cute to hear Princess Pat pretending with the food on her spoon.

I remember when Princess Pat was three and broke her arm. She had been jumping on her bed, even though I had told her not to. Sure enough, she fell off and snap when the bone. After a late evening at the emergency room, she turned to me and said, “Mom, I sure learned a lesson tonight!” Now, on to the recipe! Despite my own gluten restrictions, I do not impose those same restrictions on my family. The other night, I turned to an old family favorite: Meat filled pinwheels. Originally, these were made with a homemade biscuit dough. Over the years, I have streamlined the recipe so that it only takes 5 ingredients and is done in close to 30 minutes. There are never any leftovers when I make these pinwheels, so it definitely fits into the “family friendly” category.
- 1 pound sausage (or ground beef or turkey)
- ½ onion, chopped
- 1 can Campbell’s Tomato Soup, divided
- 2 cans refrigerated crescent rolls
- ½ cup shredded Cheddar cheese
- Brown the sausage with the onion in a non-stick skillet.
- Remove from heat and drain.
- Stir in one half of the tomato soup, reserving the rest for dipping.
- Unroll the crescent rolls and pinch all seams together, forming one big rectangle out of both cans.
- Spread the sausage/tomato soup mixture over the dough.
- Roll up, jelly roll style.
- Cut into 9 pinwheels and place them into a prepared 9X9 baking dish.
- Bake in a 400 degree oven for 25 minutes, or until golden brown.
- Remove from oven and sprinkle cheese over the finished pinwheels.
- Make a dipping sauce by combining the remaining tomato soup with ¼ cup water (or milk, if you prefer).
- Serve the sauce in little bowls with the pinwheels.
