I first learned to roast peppers at my mom’s house.  She has a gas stove, so she simply puts the peppers on a metal skewer and holds them over the flame.  I am not so lucky here in Florida.  We are an “all electric” area with no gas available unless we want a natural gas tank attached to our house.  So when I want to roast a pepper, I go outside to my grill.  Luckily, it is grilling weather  almost year-round.  It doesn’t take too much effort to roast up a beautiful red pepper.  Once it’s roasted, let it cool and then rub off the charred and loosened skin and then wash away the seeds.Roasted Red Pepper HummusI am a huge hummus fan.  I like it plain, but a huge hummus “carnival” at a local warehouse store introduced my palate to the pleasure of flavored hummus.  My new favorite is Roasted Red Pepper Hummus.  I love the color the peppers add to the otherwise drab looking spread.  A few extra pieces of pepper make a nice garnish for the top.  I paired the hummus with gluten free sweet potato and beet chips.  I also like it as a sauce on gluten free pizza with more veggies and cheese on top.  I may not be able to enjoy pita bread any more, but I can still have my hummus.Roasted Red Pepper Hummus

Roasted Red Pepper Hummus
  • 1 15 oz can chickpeas, rinsed and drained
  • ½ cup tahini
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice
  • 2 heaping tsp minced garlic
  • 1 tsp cumin
  • 1 tsp salt
  • ¼ tsp white pepper
  • 2 tsp honey
  • 2 roasted red peppers, divided
  1. Place all ingredients in a food processor, EXCEPT ⅓ of 1 red pepper.
  2. Blend until smooth.
  3. Scrape down the sides and process again.
  4. Transfer to a bowl.
  5. Chop the remaining piece of pepper and put it on top of the hummus.
  6. Refrigerate.

  1. YAY roasted red pepper hummus! This is my favorite kind of hummus. Roasted red peppers have become a favorite of mine this past year but alas, I don’t have a gas stove either. 🙁 I either oven roast or go outside as well.
