lemon ice creamThis is my final post for #IceCreamWeek.  I think I saved the best for last.

My husband’s family holds huge family reunions every year in the mountains of Idaho.  They have been a tradition since the 1950s.  We live too far away to attend, but we get the family emails that report the plans and excitement of the group.  I think about 115 people attended this last July.  One of the “must-do’s” of the reunion is the homemade ice cream night.  Every family takes an ice cream maker and one night the whole gang is treated to a massive ice cream buffet.

One recipe is made more than any other and has become the family ice cream.  It starts with a half gallon of milk, so you can imagine it makes a lot of ice cream.   It is a fresh fruit ice cream with a subtle lemon background.  I adapted the recipe, halved the amount it made and used lemon juice from lemons picked right here in Jacksonville.  The results tasted almost like a creamy, frozen lemon curd.   Everyone went ga-ga over the flavor, though my husband’s sensitive IBS tummy said, “Less lemon!”

Lemon Ice CreamI will note right now that the lemon juice I used was much sweeter than the lemon juice that comes out of grocery store lemons.  I don’t know if it’s because they are backyard, organic trees or if it’s because there is also an orange tree in the  yard, so they may have been cross pollinated.  Either way, I am suggesting strongly that you use the lesser amount of juice if yours has serious pucker power.  Meyer lemons would probably be your best bet.
