Spaghetti Squash with Bacon and OnionsEverything is catty wonkus in my house right now.  This week, we resumed football practice (because high school football is a big deal here in the south and it started in April to be ready for next year’s season), summer school (because one son had a huge brain toot last year and needs academic redemption), and swimming lessons (because we seem to live at the pool and Princess Pat isn’t proficient enough).  As though that was not enough excitement, tomorrow the Musician leaves to begin college summer quarter.  The Good Guy is driving him and then heading on to Seattle to visit his mother for a few weeks.Spaghetti squash with bacon and fetaThis state of catty wonkus-ness has rippled into my cooking.   I haven’t made anything normally.   Instead of hot dogs, I made white hots… an upstate New York delicacy that I found in Publix here in Jacksonville, FL.   Instead of putting something Italian on top of my last spaghetti squash, I went with bacon, lots of bacon.  Vidalia onions are in season, so I caramelized up an entire three pound bag of them and added them.  I had feta remaining from my recent trip to Costco, so I threw that in, too.  I am not kidding when I tell you, that catty wonkus or not, this was some good squash!Spaghetti Squash with Bacon and OnionsIt’s funny how you think things are just great, but when you shake them up a bit, you see them in a whole new light.  My family will be in a state of change while we get used to The Musician being gone.  I am probably going to miss him a ton, but I am so excited for this new chapter in his life.

Spaghetti Squash With Onions and Bacon

Ingredients
  • 1 spaghetti squash
  • ½ pound bacon, cooked, drained and crumbled
  • 3 pounds sweet onions, caramelized
  • 1 pound feta cheese crumbles
  • ½ ground white pepper
Instructions
  1. Pierce the squash with a fork.
  2. Microwave on high for 15 minutes.
  3. Remove from microwave and test for doneness with a fork.
  4. If it is soft, let it stand on the counter until cool enough to handle.
  5. Cut in half and scoop out the seeds and icky part.
  6. With a fork, fluff out the spaghetti like part of the squash into a big bowl.
  7. Stir in the bacon and white pepper.
  8. Top with onions and feta.
  9. Serve warm.

  1. First off, love the word catty wonkus (maybe that should have been in the recipe title?) But this dish sounds so yum – definitely making it.

      1. I never put strange words on my blog unless I first google them or look them up in a dictionary. I stand by cattywonkus
