Crispy Peanut Butter Brownies

Let’s give a big welcome to Amber from Rickabamboo.    I love the name of her blog as it reminds me of the song that inspired my daughter’s internet nickname.  I call her Princess Pat because when I was pregnant and she was dancing in my tummy, I told my boys that she was doing the Rigabamboo (you would have to have been a camp counselor to really appreciate the actions that accompany the song). Anyway,  she has the lyrics to the song on the sidebar of her blog, so I think she and I must be kindred spirits.  Rickabamboo contains not just recipes, but cute crafts, giveaways and updates in the life of her adorable baby boy.  I am so glad she could visit today, especially because she brought brownies!Crispy Peanut Butter Brownies

Crispy Peanut Butter Brownies
The recipe I decided to share with you all is for Crispy Peanut Butter Brownies.  Sounds amazing right?  Well they totally are. Chewy brownies, rich peanut butter, and a crispy topping. What more could you ask for?  Don’t these babies look tempting? I could eat a whole pan by myself. But I won’t. Or at least I’ll try not to. Crispy Peanut Butter Brownies

Crunchy Peanut Butter Brownies
 
Ingredients
  • 1 brownie mix
  • 1 package of miniature marshmallows, 10 oz
  • 1½ cups semi-sweet chocolate chips
  • 1 cup peanut butter
  • 1 T butter
  • 1½ cups rice crispies
Instructions
  1. Preheat the oven to 350.
  2. Grease a 9x13 pan.
  3. Mix and bake brownies according to box instructions.
  4. Take brownies from oven and sprinkle entire bag of marshmallows on top. Return brownies to the oven for 3 minutes.
  5. Melt chocolate chips, peanut butter, and butter in a medium saucepan.
  6. Cook on low until chocolate is melted, stirring constantly. Add rice cereal.
  7. Spread over marshmallows, swirling the chocolate mixture and the marshmallows as you go.
  8. Chill bars in the refrigerator until completely cool, otherwise they are way to sticky to cut.
