Welcome to this month’s Improv Cooking Challenge! This is the blogging event where a group of bloggers take two assigned ingredients and let our imaginations run wild. Next month is hearts and flours….we will be featuring foods in heart shaped dishes or that are actually heart shaped and contain flour of any kind.
This month’s theme made me regret how many banana recipes I already have on this blog. I realized that my family was in a banana rut. They needed a little shaking up. I have never made a banana dish where the bananas hadn’t disappeared into the texture of the dessert. I found the original Bananas Foster recipe on the website of Brennan’s of New Orleans and decided it was just the ticket. I combined it with this idea from Real Mom Kitchen that I found on Pinterest.The day I made these was a busy one. I made the sauce right before I left with half my kids for flag football practice. I left The Thinker home saying dinner was on the stove and said I’d put dessert together when I got back. The Thinker is sixteen, which means that his brain is still a teenage mass of bubbly goo. About an hour later, I got a phone call asking about ketchup. I was surprised that it had taken him so long to decide to eat, but thought nothing else of it. When I got home, he said, “Mom, I thought that pan on the back of the stove was scallops.” I started laughing because of all of my children, The Thinker loves scallops and hates bananas.
“Mom,” he said, “I gagged.”
On the other hand,those who waited for the puffy little Dutch Babies to be made and the dessert to be put together enjoyed a fun sweet treat. The cups that the pancakes formed in the muffin tin held most of the sauce like a little bowl. My impatient boys grabbed them and stood around eating. It’s funny how boys don’t care about crumbs and drips. As I mopped up the floor the next morning, I shook my head once again. Maybe their wives will be able to get them to use bowls and plates!
- 3 Tbsp butter
- 1 cup brown sugar
- ½ tsp cinnamon
- ½ tsp nutmeg
- 4 bananas, peeled and sliced
- ½ tsp rum extract
- ½ tsp vanilla bean paste
- 1 cup milk
- 1 cup flour
- ½ tsp vanilla
- dash salt
- 4 eggs
- In a saute pan, combine butter, brown sugar, cinnamon and nutmeg.
- Heat until sugar dissolves and mixture is bubbly.
- Add bananas and heat until soft.
- Remove from heat and add flavors.
- Set aside.
- Preheat oven to 400 degrees.
- Put a dab (about a tsp) of butter in the bottom of 12 muffin tins.
- In a bowl whisk together eggs, milk, vanilla, salt and flour.
- Put muffin tin in oven to melt butter and heat pan.
- Divide batter evenly between 12 muffin cups.
- Bake 12 minutes.
- Remove from oven and fill with banana sauce.
