Saturday, we rented a 5’X8′ trailer from U-haul.  My eldest son and my husband spent the day hauling 5,000lbs of tile, mortar and grout to our house.  It rained twice that day.  Not much else got done.

Monday, the tile installers showed up.  They made a few plumb lines and then went to work.  Tuesday morning, my husband called me from the house and told me that none of the lines were straight.  He was SO mad.  I wanted to throw up as I thought of the money that was literally flying out the windows of that house.  I got there a few hours later and saw what we had missed the day before.  By noon, all of the tile had been pried up leaving a sea of dried mortar that we would spend the next HOURS scraping up.

I keep telling myself that if I can just get through the next ten days, it will all be over.  The carpet has been pushed back so many days, I think it will be installed the day before we move…if we are lucky.  Because school starts on the 14th of August and we MUST MOVE BY THE 10th!!!!!

On the bright side, the kitchen appliances arrived.  The dishwasher and microwave haven’t been installed yet, but the fridge and oven are up and running.  The garage door opener is on and it is SO quiet.  The AC works, the leak in the roof is fixed, the new locks are on the doors.  Yes, things are moving forward.

Salmon with Mexi-Mayo Sauce
 
Ingredients
  • 1 pound of boneless salmon fillets
  • ¾ cup mayonnaise
  • ½ cup salsa, drained
  • ½ tsp salt
  • ½ tsp ground white pepper
  • 1 tsp garlic powder
  • ½ tsp cumin
Instructions
  1. In a bowl, mix the mayo, salsa, salt, pepper, garlic powder and cumin until well blended.
  2. Place fillets in a baking dish.
  3. Spread mayo mixture on top of fillets.
  4. Bake uncovered, for 20 minutes at 350 degrees.
