My eldest son tells me all of the time that I am totally behind the times. Some fashion trends come and go without me even noticing. My wardrobe is more “classic” than “edgy.” But I will admit that some days it seems more frumpy than anything else.
Apparently, cake in a mug is another trend that passed me by. I think perhaps they have been around for quite some time…years even…without my having tried to make any. Luckily, the Secret Recipe Club stepped in to help rectify this gross omission in my menu repertoire. This month, I was assigned Megan’s blog, Cooking Whims where I found the cakes. In mugs.
I made one while the kids were in school to see how it would turn out. My second son, the Thinker is always the first one home, so I let him be my guinea pig. Later that night, I made a few more and then let the Thinker make one for himself. He had a hard time reading my recipe. He couldn’t see how a “T” and a “t” meant different measures. Then, after he’d grumbled through mixing the ingredients, he announced that his cake hadn’t turned out. I looked into his mug and inquired when he was going to cook it. He got a sheepish look on his face and said, “I though the instructions said to stir it for one minute!” Teaching teens to cook can be a real process….
And one other thing. If you want to have a tidy looking mug, mix the ingredients in a separate bowl before cooking. As you can see from the above photo, things slosh.
- 2 Tbsp self rising flour
- 2 Tbsp cocoa
- 2 Tbsp sugar
- ⅛ tsp salt
- 2 Tbsp milk
- 2 Tbsp vanilla yogurt
- 2 tsp oil
- ½ tsp vanilla extract
- Mix all ingredients in a mug.
- Microwave for 1 minute.
- Let sit until cool enough to eat.
- Top with whipped cream or ice cream.
