 So many things can go wrong when you try a recipe for the first time.  As if the newness of this Chocolate Chip Oatmeal Pie weren’t enough, I didn’t pay close attention to this the first time I made it and 1. I over-baked it, 2. I didn’t make a real crust, but used graham crackers instead, 3. I used brown sugar instead of a liquid sweetener and 4. I used coconut chips instead of shredded.  It was almost a total fail.Chocolate Chip Oatmeal Pie
Luckily, I went back and made it again, following the instructions more closely.  The results were fantastic.  Normally in a chess pie, you have an almost pudding like filling.  The oatmeal in this recipe causes the filling to thicken up like a hearty breakfast.  I, ahem, may have actually had a piece or two for breakfast the next day….
Chocolate Chip Oatmeal Pie

Chocolate Chip Oatmeal Pie: Your Recipe, My Kitchen
  • 2 eggs
  • ¾ cup pure maple syrup or honey
  • ½ cup unsweetened shredded coconut
  • ¼ cup coconut oil, melted
  • 1½ tsp vanilla
  • ½ cup milk (I used almond milk)
  • ½ cup rolled oats
  • ½ cup chocolate chips
  • 1 unbaked pie shell
  1. Mix filling ingredients and pour into pie shell.
  2. Bake for 50-60 minutes at 350.
  3. Cool before serving.
To make this gluten free, use a gf pie crust like Bob's Red Mill or Glutino and use gluten free oatmeal.
