Potato Pancakes

Potato Pancakes like my German grandmother made.

Potato Pancakes
  • 4 medium potatoes, grated
  • ⅛ cup onion, grated
  • 1 apple, peeled, cored and grated
  • 3 eggs
  • ½ cup flour
  • 1 tsp salt
  • bacon fat for frying
  1. For ease of grating, use a food processor.
  2. Combine potatoes, onion, apple, eggs, flour and salt in a bowl.
  3. Heat the bacon fat in a deep frying pan over medium high heat.
  4. Drop the potato mixture into the hot grease with a big serving spoon.
  5. Flatten with a spatula and fry until uniformly golden brown, about 4 minutes on each side.
To make gluten free, substitute cup for cup gluten-free flour mix for all-purpose flour.
You can also use olive oil, butter, coconut oil or vegetable oil to fry pancakes
