Mediterranean Chicken with Olives

Mediterranean chicken with olivesI made the most incredible chicken a while ago.  The recipe came from the weekly newspaper, with a few tweaks from me. I have made it a few times and added even more tweaks.  I am not sure it resembles the original any more, other than it still contains chicken and olives.  Oh well.  I think this version is my favorite.

Mediterranean chicken with olives
Mediterranean Chicken with Rosemary
Serves: 8-10
  • 2 whole chicken breasts, cooked and cubed
  • 2 Tbsp butter or olive oil
  • 4 oz jar prepared pesto sauce
  • 2 small cans sliced black olives (2.25 oz) or 1 can whole olives
  • 1 14 oz can petite diced tomatoes
  • 2 tsp garlic powder
  • ½ tsp parsley
  • salt and pepper to taste
  1. Place cooked chicken in a skillet over medium heat.
  2. Add the pesto sauce, tomatoes, olive oil, garlic powder, olives, salt and pepper
  3. Stir occasionally as it comes to a simmer.
  4. Serve accompanied by rice or pasta
