White Chicken Chili

White Chicken ChiliSometimes Jupiter aligns with Mars and meals just turn out well. No one complains, all the bowls are licked clean and “thanks, Mom” rings through the house. It is a kind of nirvana. Reality hit when the Comedian realized that he was still going to have to do the dishes at 7:30pm. White Chicken Chili

Ingredients
  • 4 boneless skinless chicken breast halves
  • 2-3 Tbsp olive oil
  • 2 cans Northern beans, rinsed and drained
  • 1 can regular Rotel tomatoes
  • 1 14.5 oz can corn, drained
  • 12 oz cream cheese
  • ⅓ cup fresh cilantro, chopped
  • 4 cups chicken broth
  • 2 ribs celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp oregano
  • 2 tsp cumin
  • salt and pepper to taste
Instructions
  1. Cut chicken into bite sized pieces.
  2. In skillet, cook in olive oil until almost done.
  3. Add celery, onion and garlic, continue cooking until vegetables are soft.
  4. Add remaining ingredients.
  5. Bring to a boil, reduce heat.
  6. Simmer 20 minutes.

We had an easy  White Chili meal with corn muffins and Molasses Cake for dessert. I used my never fail, always win corn muffin recipe.  It had a mild chili taste. Texans would say it was like cream soup (I say that because my dear brother, who lives in Houston, puts something spicy into everything), but it was perfect for kids.
