Tomato Herb Pasta

I first ate this dish at a friend’s house. She graciously gave me the recipe. It is a great accompaniment to chicken, fish, beef or pork.Tomato Herb Pasta

It originally called for 1 cup of butter.  Although that much butter is wonderful, it was too much.  I cut it down to one stick and then cut it down again to half a stick.  I have used butter or olive oil with great results.  This is a super flavorful dish.

Tomato Herb Pasta
  • 1 Tbsp dried onion
  • ½ tsp oregano
  • ½ tsp garlic powder
  • ½ tsp basil
  • ½ tsp salt
  • ¼ cup butter
  • 4 Tbsp water
  • 1 15 oz can diced tomatoes OR 2 cups peeled and diced fresh tomatoes
  • 4 cups uncooked egg noodles
  1. Boil noodles according to package directions.
  2. Meanwhile, melt butter over low heat.
  3. Add herbs, salt, water and tomatoes.
  4. Cover and simmer for about 15 minutes.
  5. Mix in drained pasta and serve.
Use gluten free pasta for a gf dish.
