Breakfast Casserole with French Fries

French Fry Breakfast CasseroleFrench fries are one of my favorite recipe hacks.  They are pre-cooked, pre-cut and so easy to add to anything!  This breakfast casserole is a huge hit because, come on, who doesn’t want to feel like they are getting away with eating French fries for breakfast!!!

Breakfast Casserole with French Fries
  • 16 oz crinkle cut frozen French fries
  • ½ cup ham, cubed (you can use any meat you want)
  • 1 red sweet bell pepper, chopped
  • ½ onion, minced
  • 2 cups shredded cheese (I use Cheddar or Colby-Jack, but any would work)
  • 5 eggs
  • ⅓ cup milk
  1. Toss fries, ham, pepper, onion and cheese then put into a greased 9x13 casserole dish.
  2. (note: you can stick it in the fridge at this point and leave it overnight)
  3. Whisk the eggs and milk and pour over the fries.
  4. Top with even more cheese if you are a cheese fiend like me.
  5. Bake 350 degrees for 1 hour or until done.

I was going to make sausage egg mcmuffins but I only had 2 muffins so I looked in my freezer and seen french fries lol so I got on google and googled breakfast dishes with french fries in it and this popped up so I made it it’s in the oven now I used sausage instead of ham because I didn’t have ham but it looks so good.
