Breakfast Casserole with French Fries

French Fry Breakfast CasseroleYes, you read the title right; french fries for breakfast. This is a scrumptious, easy, frugal way to start or end the day. I wanted to make a hearty breakfast, but was in a hurry.  I will let you in on a little secret….I hate peeling potatoes.  Any time I can get out of doing so, I will.French Fry Breakfast CasseroleEnter in the modest frozen French fry; they save me so much time.  And, seriously, have you ever known a child, of any age, to turn down a meal that involves fries?  My kids had this entire pan gone in one meal.

Breakfast Casserole with French Fries

Ingredients
  • 32 oz bag frozen crinkle cut french fries, (optionally cut into cubes)
  • 1 cup ham, cubed
  • 2-3 roasted red pepper parts (from a jar), minced
  • ¼ onion, minced
  • 1½ cups shredded cheese
  • 5 eggs
  • ⅓ cup milk
Instructions
  1. Place fries, ham, pepper, and onion into a greased 9 X 9 pan.
  2. You can stick it in the fridge at this point, if you want to make it the night before.
  3. Otherwise, whisk the eggs and milk together and pour over the fries mixture.
  4. Top with cheese.
  5. Bake 350 degrees for one hour or until done.

I was going to make sausage egg mcmuffins but I only had 2 muffins so I looked in my freezer and seen french fries lol so I got on google and googled breakfast dishes with french fries in it and this popped up so I made it it’s in the oven now I used sausage instead of ham because I didn’t have ham but it looks so good.
