Tuscan Pork Roast

This one is my old stand-by when company comes over. It’s easy, elegant and delicious. I never have to worry whether or not it will turn out or if folks will like it. If they are pork eaters, they will love this. The flavors are not Bam! in your face, but nonetheless, they make themselves known.Tuscan Pork Roast
Your house will smell amazing while this roasts! I usually do not have to worry about the leftovers because they are so good, my family eats them while standing in front of the open fridge. Slices of this roast make great sandwiches.Garlic, Rosemary, Olive Oil Pork Roast

Tuscan Pork Roast
  • 5-8 cloves garlic, minced ( or about 2 Tbsp minced from a jar)
  • 1 Tbsp rosemary
  • 1 Tbsp olive oil
  • ½ tsp salt
  • 1 3-4 pound pork loin
  1. Mix first four ingredients into a paste.
  2. Rub all over pork.
  3. Let stand 30 minutes.
  4. Bake 325 degrees 2- 2½ hours or until internal temperature reaches 160 degrees.
  5. Let rest 5-10 minutes after removing from the oven to seal in the juices.

  1. >This looks good.. to do it in the crockpot I might brown the pork in a skillet first and add a little broth or water to the crockpot…

  2. >Ooh yum and yes, I agree with MJ, to do it in the crockpot you just need some sort of liquid.

    Brown the meat first in a skillet and then pop it in the crockpot with all the spices. Add about a cup or so of broth or water and there ya go 🙂
